Automatic Sheeters

G. CINELLI - ESPERIA CORPORATION® Automatic Sheeters come with complete Stainless Steel Heavy-Duty structures. Excellent for use in sheeting all types of soft pastry dough as well as stiff pizza or other types of dough. Suitable for large pastry operations where industrial production is required.

Oxidation resistant large diameter Chromium Cylinders adjust for opening between .1mm to 50mm (.004" to 1.97") for the CG/SFA Models. The Industrial version CG/SFAI cylinders adjust between .1mm to 60mm (.004" to 2.4"). Large diameter Cylinders enables superior sheeting action while avoiding adhesion and stress.

CG/SFA

Belts are of varied speed from entrance to cylinders and exit from cylinders for exceptional fold free sheeting action. The differentiated speed of the belts between entry and exit of approximately 35% avoids possible dough obstructions, stretching and tearing of delicate dough. High production volumes are possible with these units due to rapid travelling speeds of the belts. The CG/SFA models boast 57 cm/sec (22 ½"/sec), while the CG/SFAI models boast 83 cm/sec (32 ¾"/sec).

Computerized and Programmable Panel

These machines are computer controlled and accept up to 50 desired programs that enable the user to define movements such as forward, reverse, automatic cylinder calibration (open/close) according to dough requirements. An advantage when non-skilled labour must operate this unit.

Once desired thickness is achieved at the end of the work cycle, the Automatic Dough Take-Up system (shown below) rolls the dough onto the rolling pin secured upon the special support, without compromising dough quality. Automatic Sheeters also come complete with an automatic and incrementally adjustable Flour Duster (shown below). Belts are FDA Approved.
